Russian Pelmeni: Delicious and cheap

Pelmeni are dumplings consisting of a filling wrapped in thin, unleavened dough. There a lot of different fillings. Most popular is a filling of minced meat (pork, lamb, beef). The traditional Udmurt recipe requires a mixture of 45% beef, 35% mutton, and 20% pork. Pelmeni are often also filled with mushrooms, onions, turnips, or sauerkraut instead of meat.
Pelmeni are related to Ukrainian vareniki and Polish pierogi. In the United States and Canada, the term pierogi or perogis is often used to describe all kinds of Eastern European dumplings. Pelmeni are never served with a sweet filling! The cooked pelmeni are served on their own or topped with melted butter or Smetana (a sour cream like crème fraîche).
